5. Salmon with gooseberry sauce

A couple weeks ago we shopped at a grocery store across town that we don't normally go to. On their bargain table, they had canned gooseberries. My dad loved gooseberry jam, had a few bushes, and I think my son just wanted to see what gooseberries are like.

I drained the juice, added some water and white wine, some grated ginger and a squeeze of lemon, thickened it with cornstarch, added the gooseberries. I'm baking the salmon fillets, with just salt and pepper. Side dishes are asparagus and baked potatoes.
