2. The only other thing I'd do is toss the freshly chopped eggplant with salt

and put it into a colander in the sink for an hour or so, then rinse the salt off. That gets that dark brown, bitter, nasty juice out of the eggplant, something I can always taste if I skip this step.

For me, it's eggplant vs. eggplant a la cigarette butt.
