Eggplant later, thanks lmsp; gonna try simplified:

**For the Eggplant:
- 1 large eggplant, cut into 1-inch cubes
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika

**Prepare the Eggplant:
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the eggplant cubes with olive oil, salt, pepper, garlic powder, and smoked paprika.
- Spread the eggplant on a baking sheet in a single layer and roast for about 25-30 minutes, or until golden and tender, stirring halfway through.

(I somehow recall my mother making eggplant, when I was a kid, so I'm gonna try it.)

and put it into a colander in the sink for an hour or so, then rinse the salt off. That gets that dark brown, bitter, nasty juice out of the eggplant, something I can always taste if I skip this step.

For me, it's eggplant vs. eggplant a la cigarette butt.
