8. Chile Relleno casserole

Stuffed poblanos, under a layer of cornbread. The stuffing was pepper jack cheese and sauteed green onion. The cornbread included corn kernels off a fresh ear, cilantro, and more of the pepper jack. Topped with grated pepper jack. Pico de gallo on the side.

Probably not as healthy as it might have been, but meatless, cheap and good.
