But my eggs were too old, so I brushed olive oil on eggplant before dipping in bread crumb/herb mix.
Next time, I will use 2 bottles of Prego pasta sauce.
Overall, gs & I are quite pleased with my trial run. Lol

(73,009 posts)I used Prego chunky garden veggie sauce, Kroger shredded 5 cheese mix for breading, & sliced mozzarella from Aldi to top it
It was surprisingly tasty.
Give it a try.

I cooked both sliced eggplants in 1 cake pan, then dumped Prego sauce atop them to save arms.
I used Aldi panko bread crumbs, but likely won't bother with that step next time.
Let me know if you try it.

(140,477 posts)Have a good sauce from 'local' pizza place, so that's solved. Will look for eggplant (and might add zuccini and another squash.)
AND include a pasta, maybe fusilli.

First tomato night is very special, and that sounds like a wonderful summer meal!
I was upset for almost 24 hours because the day before I had stopped at one of my gardens to look at a tomato I had my eye on as my first ripe tomato.
It was gone.
Today I stopped by to tie a protective netting over it. In the process, I found the branch had fallen, and there was the tomato. Still green, but quite intact. The groundhogs didnt get it after all.

(41,156 posts)A friend from Jersey is pet sitting for a Manhattan cat for 3 days this week.
This cat always cracks me up. If hes hungry, he bites your arm and your ankles.
Hes an all white cat with two different colored eyes. One blue, one grey.
Also he sits at the table and eats like a human. When hes done he knocks the dishes off the table.
Cracks me up, what a jerk he is. 😍
You're right- the kitty sounds like a jerk! My grandpets have their quirks. The cats like the dog food, the dog likes the cat food. The dog is on a special diet, so when their is food available, they aren't guarding it, I am.
It is pretty quiet, and the weather is nice for walking. They took the big dog with them, and it sounds like he's giving them a run for their money. Ha. He isn't any less of a lunkhead there than he is at home. Lol
Sounds like a good time. Pet eccentricities are amusing. I know Id be enjoying it. 😝

(870 posts)Stuffed poblanos, under a layer of cornbread. The stuffing was pepper jack cheese and sauteed green onion. The cornbread included corn kernels off a fresh ear, cilantro, and more of the pepper jack. Topped with grated pepper jack. Pico de gallo on the side.
Probably not as healthy as it might have been, but meatless, cheap and good.
Retrograde
(11,253 posts)and leftover pizza. Mr. Retrograde got a bag of Hatch chiles at the market the other day: we roasted them, removed the charred skins, and cooked with sauteed onion and some turkey stock. It's, um, hot - I usually do this soup with roasted red peppers. I added some half-and-half to try to tone down the heat a bit. There will definitely be leftovers for tomorrow.

(1,527 posts)Steam-fried in evoo and veggie broth: chopped onion, shallots and garlic. When soft I added butter beans and sliced white and cremini mushrooms cooked until soft. Turned off the heat and added chopped chives and parsley. I mixed the mushrooms with eggless wide noodle and sprinkled on a little tamari sauce. Cheers! 🥂
