There were also tons of wild cattle roaming Florida that enterprising individuals could round up and herd to cattle boats in Tampa and places south for export to the Caribbean.
Of course they used whips they cracked to get the animals in line along with dogs. Florida always had decedents of these large, bulldog like animals and they are some very rough, tough dogs hunters have kept going to use on the ridiculous amount of wild hogs present since the Spanish w of course, additions from escaped farm animals.
