… to add plenty of flavour to soups.

I also save veggie trimmings (heavy on the mushroom stems) in a ziploc in the freezer and make a concentrated stock when it’s full, which does the same thing.

I’m sure doing soups in the Instant Pot also concentrates flavours, too. Haven’t had any complaints about the lack of meat—even from my son, who eats ANY damned thing.
