I picked up some beautiful eggplant yesterday at the local farm market. [View all]

I need a recipe for an eggplant dish that will satisfy 4 adult guys. Am considering this one, the rollup version. I like it because it doesn’t call for ground beef, which for various reasons I use very seldom.
