Sunday Breakfast! Helene's Great Granola/French Toast with Whipped Strawberry Sauce 🌞 [View all]

Helene’s Great Granola



A family heirloom recipe that’s been handed down through the generations, this granola
can take on many flavors depending upon which spices, fruit, nuts, and seeds are used.
Granola will last several months in the freezer or refrigerator, and it makes a healthy
snack.

4 cups old-fashioned rolled oats
1/2 cup walnuts, coarsely chopped
1/2 cup almonds, coarsely chopped
1/2 cup sesame seeds (see Additions)
1 teaspoon cinnamon (see Variations)
1/4 cup unsalted butter or ghee
1/4 cup real maple syrup or honey
1 tablespoon unsulphured blackstrap molasses
1/2 teaspoon sea salt
1 cup purified water or unsweetened apple juice (see Note)
1/2 cup unsweetened apple butter or apple sauce
1/2 teaspoon real vanilla,
almond, lemon, or orange extracts
1 to 2 cups unsweetened dry fruit such as raisins, currants,
blueberries, or chopped apricots, apples, or prunes,
unsulphured preferred

PREHEAT THE OVEN TO 350 DEGREES.

In a large bowl, combine the rolled oats, walnuts,
almonds, sesame seeds, and cinnamon.
In a medium-size saucepan, melt the butter over
medium heat. Add the maple syrup, molasses, and salt,
and heat until the molasses dissolves. Add the water,
apple butter, and vanilla extract and stir again.

Pour the butter mixture into the oatmeal mixture and
stir well to coat.

Spread the granola onto two well-buttered baking
sheets. Place in the oven. Using a spoon or a spatula, stir
the granola every 5 minutes as it bakes. Continue baking
until golden brown and crispy, 15 to 20 minutes.
Remove from the oven and pour into a large bowl.
Add the dry fruit, toss, and set aside to cool completely.
Once cool, store in a covered container in the refrigerator or freezer.

ADDITIONS: Substitute or add coconut, pumpkin seeds, or pecans.

VARIATIONS: Substitute ginger, cardamom, clove, or allspice powder.

NOTE: The granola will be sweeter when made with apple juice.

Sunday Morning French Toast with Whipped Strawberry Sauce



Now you can make wonderful-for-you and delicious French toast with a fancy topping
right in your own kitchen. Start out your weekend with this wonderful treat.

HEALTHFUL HINT: Don’t shortchange yourself by eating white bread. It has a fraction
of the vitamins and minerals contained in whole grain breads, and very little fiber. When
whole grains are refined, 22 essential nutrients are removed, and 4 to 6 nutrients are
replaced. White bread is then called “enriched”.

2 eggs, organic preferred
1 cup plain yogurt with active cultures
1/2 cup unsweetened apple juice
4 to 6 slices whole grain bread
2 to 3 tablespoons unsalted butter
Cinnamon

1 pint fresh strawberries, washed, stems and leaves removed (see Note)
1/2 cup unsweetened apple juice
1/4 cup all-fruit strawberry conserves
Pinch sea salt
1 teaspoon real vanilla extract
3 tablespoons unsalted butter

NOTE: Substitute the strawberries with raspberries, peaches, blueberries,
or any other favorite fruit, and a corresponding all-fruit jam.

Yield 2 CUPS

HEALTHFUL HINT: Strawberries are high in vitamin C and bioflavinoids, as are most
berries. Vitamin C is an antioxidant—a free-radical antidote. Bioflavinoids are essential for
healthy capillary walls and the metabolism of vitamin C.

Directions

In a blender or food processor, beat the eggs, yogurt,
and apple juice.

Pour mixture into a deep 9- x 13-inch rectangular
pan. Place the bread into the egg mixture. Turn over to
coat on both sides. Set aside to allow the liquid to
absorb.

Heat a griddle, skillet, or electric frying pan.

Melt 1 tablespoon butter until foaming. Shake
gently to coat the cooking surface. Add the
bread and dust with cinnamon. When the
undersides are lightly browned, use a metal
spatula to turn. Add more butter, if needed.

Remove and set aside to keep warm. Add more butter to
the griddle for the remaining slices.

Serve immediately and top each serving with
warm *Strawberry Sauce*.

YIELD 4 Servings
