We're Americans, we grill and fry steaks alla time!
I'm here to tell you we're doing it wrong.
I fixed this last night and both my wife and I were stunned.
The meat was more tender than any sirloin had a right to be
and the juices of the steak were all intact. Minimal juices on
the baking pan. 1.5lb inch thick. Wife likes it medium-well
so I went the whole 45minutes. It was perfect. Oh, and we
got a delightful grilled taste from the high-temp sear...probably
you could finish this off on the grill if you like..
This is how I will be cooking sirloin from now on. YMMV..
Reverse Sear Sirloin Steak

Prep time: 45 minutes
Cooking time: 1-1 ½ hours
Serves: 2
Ingredients:
1-1 ½ pounds of sirloin steak
Salt
Pepper
Cooking spray
Olive oil
Follow these simple steps to reverse sear sirloin steak:
Step 1: Prepare for Cooking
Remove your steak from the refrigerator 45 minutes before youre ready to put it in the oven.
Then, salt it generously on both sides, using your fingertips to press the salt into the steak.
Move an oven rack to the middle slot in the oven before preheating the oven to 225 degrees.
Spray a rimmed baking sheet with cooking spray.
Step 2: Reverse-Sear Sirloin Steak
Add steaks to the baking sheet. Add black pepper and your other choice seasonings to both
sides of the steaks before putting them in the oven. Cook for 30-45 minutes, checking the
temperature with a meat thermometer before searing.
Preheat a skillet over medium-high heat with a drizzle of olive oil. Transfer steaks to the
preheated skillet, and sear for 2-3 minutes on each side until golden brown.
Step 3: After Cooking
Place steaks on a clean plate or cutting board. Tent foil over the steaks as they rest for 5-10
minutes before serving.
