What's for Dinner, Sat., June 28, 2025 [View all]

Big bowl of greens on the side.

Red bell pepper

Celery

Onion

Cucumber

Cherry Tomatoes

Mozzarella balls

Corn from a roasting ear

Anchovy mustard vinaigrette

Bruschetta sandwich. Other than the salad, I did not have to cook because a friend stopped by on his way home from a wedding. He had all kinds of goodies from the reception. Among them were sandwiches on artisan bread, and I sampled them. Out of all the different kinds, I went crazy over bruschetta with mozzarella. Whoever made this got the touch of acidic just right. I have a nice big box of various sandwiches in my refrigerator if I want another.

Plain kombucha.

Made up my own dessert. Graham cracker crust and on top I put Greek yogurt with lemon mixed in. I even grated lemon rind into it to make it really lemony. Also mixed in was bits of grated ginger and diced dried apricot. On top of that, blackberries and sliced almonds. Put it in a glass pie dish and froze it.
