What's for Dinner, Thurs., Jan. 9, 2025 [View all]

In honor of Jimmy Carter, I made Peanut Soup from my Mollie Katzen recipe collection. It's official name is "West African Peanut Sweet Potato Soup." I haven't made this in years! I figured today would be a good day, though.

It has onions, ginger, cayenne, carrots, veggie stock, V-8, peanut butter, chicken stock, and scallions, parsley, and/or cilantro on top. I have all three to use.

That will probably be enough for me, but if not, I'll cut off a little piece of the breaded cod I bought yesterday from the Polish deli and have it as a half sandwich on artisan bread with tartar sauce and a lemon slice.

A filled red velvet cupcake for dessert, along with a hot mug of Earl Grey.
