If you roast a whole turkey until the thighs and drumsticks are done, you run the risk of dried breast meat.

This year our turkey has one whole breast, two thighs, three legs, and four wings. I bought all the parts instead of the whole intact bird.

I'll smoke the breast to 155F.
Roast the rest in the air fryer (in shifts) top 175F.
Dry brining all parts.

BTW, I didn't come up with this. Watched "That Dude Can Cook" on YouTube.
