I always liked that song, too. Mine uses the Dave Mason version as my launch point.
I had it in my head to do a harder rock version of it, and use it as an opportunity to show off my speed on guitar.
I tactically screwed up Going Down. I intended it to come off like a jam night tune. Hence, the organ solo, the 3 guitar passes, each played quite differently. I should have used 3 different guitars & different amp settings to create the illusion of 3 separate players. But, I had mastered it when the "Duh" moment occurred. I wasn't willing to go back & re-record, so I lived with it.
The one fun part on Watchtower: the sound of the wildcat right after I sing "...Wildcat did growl", I did on the guitar. It's not a sample of a big cat. It's a guitar noise.
