I'd skip the nutmeg, and cloves. Everything else looks great!

In our house my Greek-American mom made a meat stuffing. (Thanksiving, and Christmas). Ground beef (some mix w pork, or pork only) sautéed in butter, or olive oil, garlic, salt, pepper, add pearl onions, previously roasted chestnuts, then chicken, or turkey broth. Add some tomato sauce towards the end.

Some also add uncooked rice at the start. I had that versionat another Greek-American friend's mom's house.
