The kid cats are in for a real treat

I found a frozen chicken, buried in the freezer. Although my appetite is still pretty comatose, I do love home made chicken soup. I roasted the chicken, carved away most of the meat, cooked the carcass in a slow cooker for about 15 hours and then salvaged as much of the remaining meat as possible.

I'm not a fan, at all, of drum sticks and have a limited taste for thigh meat. So, the breast meat was completely separated before cooking the carcass. I'll use it in the soup. LOTS of dark meat is now available for treats and bribes. Carys and Merlin especially loves chicken meat. Carys even meows for it. Merlin simply demands.

I'll toss some Pancetta in a skillet, cook for a few minutes, then toss in the chicken, some mushrooms, some Cacio de Pepe sauce and serve it on Cavatappi pasta. I'll wash it down with a glass of Pinot Grigio.
