What's for Dinner, Sat., July 11, 2026

Couscous Salad with Summer Fruit and Feta Cheese. There will be berries: cherries, blackberries, and blueberries. maybe pomegranate arials. Baby arugula mixed in. I'm using the large pearl couscous.

Might stop at the bakery and find some sort of interesting bread, or bake some. I was at Panera and saw they had muffin tops for $2.64 each. I said no I don't think so.

Kombucha: pineapple.

Dessert: salted caramel chocolate chip cookie with cold decaf.

It was a nice treat.

I also made a zucchini casserole. One of my favorite recipes

Had a fresh peach. Good but a little under ripe.

Potato salad with hard-cooked eggs. Duke's mayo.

Microwaved corn. Fruit salsa drizzle option.

Various sodas.

Steam-fried in evoo and veggie broth: chopped onion, orange bell pepper, thinly sliced cabbage, sliced zucchini, mushrooms and garlic. Marinara sauce was added as well as chopped broiled salmon left over from yesterday. Served over whole grain penne and topped with vegan Parmesan. Cheers!
