What's for Dinner, Wed., May 13, 2026

Panko breaded flounder filets with lemon pesto.

Small garden salad with cucumbers, celery, and cherry tomatoes.

Kombucha: Mango-passion fruit.

Dessert: Decaf and a biscotti.

4. Jumble day

I got a jury summons a couple weeks ago, so I set an alarm for 6 am today… only when I called the jury duty number last night, it said NO jurors were to report. Hooray!f

Except for the part where I forgot I’d set an alarm. So I was jolted awake at 6:00, wondering what the hell I was doing up… Finally thought to check my alarm, which I’d labeled “jury duty.” Derp.

So I fiddled on my phone for an hour and fell back to sleep. Cats woke me up much later and then my son swooped in to talk my ear off until I realized it was after 6 PM…

Which brings me to the gist of this post: I just had chocolate pop tarts (generic). Who knows when/if I’ll get around to an actual dinner.

Unemployment is doing me no favours when it comes to organizing my life.

5. Eggplant Parm

I learned this method while working as kitchen help in an Italian restaurant during college. Slice lengthwise small eggplants as thin as possible, sprinkle with salt and dredge in flour. Fry the eggplant slices in hot olive oil until done. Drain well on paper towels. Layer the eggplant in a pile in individual ramekins and cover in warm marinara. Spread grated mozzarella on top and sprinkle with Parmesan ( I used non dairy varieties). Put under the oven broiler until the cheese is melted. The owner of the restaurant was from Sicily and said this is how it’s done there. I’ve always made it this way. It’s so good. Also had a salad of greens and cherry tomatoes and toasted baguette slices. Salute!🥂
