What's for Dinner, Tues., April 7, 2026

Stir fried broccoli and beef filet. Quinoa instead of rice.

Scallion pancakes.

Pineapple ginger kombucha.

Dessert: vanilla ice cream and chocolate chip cookie.

p.s. I'm not posting much right now because I can't find my mouse. Just an FYI.

1. 2 new to me recipes

Roasted cherry tomatoes

Ingredients
▢1 pint cherry tomatoes - 2 cups
▢1 tablespoon fresh garlic - minced
▢2 tablespoons olive oil - extra-virgin
▢1 tablespoon aged balsamic vinegar>I used a little too much, so next time I will measure carefully
▢½ teaspoon Diamond Crystal kosher salt - or ¼ teaspoon of any other salt, including Morton kosher salt
▢¼ teaspoon black pepper
▢½ teaspoon dried thyme


Baked chicken breasts-I used French's crispy fried onion seasoning mix.
I followed the box instructions.I will go back to seasoned panko, but my sister liked it more then I did.
I had decafe cold tea, she had ice water

5. Mock Egg Salad Wraps

Drained and mashed a block of firm tofu. I mixed in minced onion, red bell pepper, celery, sliced radish and black olives, vegan mayonnaise, Jax tofu seasoning, chopped fresh parsley, sweet pickle relish and a small amount of turmeric. The salad was spread on lavash flat bread slathered with walnut-balsamic dressing, piled with sliced tomatoes and whole romaine leaves before folding up into a wrap. Cheers!🥂

… if I hadn’t just had tofu scrambler for four straight meals.

Dinner may be a total miss tonight as well because I had people eating leftover Easter candy around me all day and finally succumbed to the bottomless bag before the end of the day—three small Kit Kat bars, a couple small peppermint patties, and a couple chocolate eggs. Blargh. Who knew you could overdose on chocolate?… and at 5 pm! Derp.

I don't know if I am OD'ing, but I am on my fourth Ferraro Rocher. I decided I'd rather have them than the chocolate chip cookie.
