What's for Dinner, Sun., April 5, 2026

Roasted salmon with maple glaze.

White vegetable puree (cauliflower, parsley root, parsnips and turnips). This is so easy: I just put the veggies in the slow cooker and when they are done, I puree them in my blender. Butter, herbs like basil and chives. I also use half 'n half. Taste is fantastic.
I sprinkle chopped parsley over the top.

Baby arugula salad with vinaigrette. Parmesan, grated.

Pineapple kombucha.

Dessert: Cherry mascarpone strudel with vanilla ice cream.

I didn't work very hard on this meal. Most of it I made over the last day or two. That's good because I was transplanting eggplant and pepper seedlings today.

1. Baked ham with an orange glaze

Baked sweet potato topped with parmesan and black pepper. DH will probably add some butter, but I like it just like this. The parm stands in for salt.
Corn, fancied up with a little sauteed red bell pepper and green onion
Asparagus (plain steamed)
Whomp biscuits. (I wanted to make popovers, but the stuff in the exploding tube is a family tradition for DH.)
Egg custard for dessert

I did consider making a blender hollandaise for the asparagus, but every time I make it, we either eat it all to save it (not good) or throw some of it out (also not good). We're only two people.

Do you think it would work someday to try adding cold leftover hollandaise to a batch of cornbread as a substitute for the egg and butter in the recipe? The little bit of lemon juice and dash of tabasco wouldn't hurt the flavor any, and I wonder how it would affect the texture. How bad could it be?

put the ham in my barrel cooker. if everything else I have tried in it is any indication, it is going to be really good.
deviled eggs, asparagus, boxed au gratin potatoes (kids insist), rolls, black olives, baby dills. homemade sparkling lemonade and strawberry shortcake and whipped cream for dessert.

Think I'll make a turkey sandwich. Too tired today to cook the turkey breast roast I bought. Maybe tomorrow.

I’m quietly staying home and making a simple dinner, so it’s rice and Chana masala from Trader Joe’s. Maybe an apple later.

2 big chunks over pork roast! Into the freezer chunk 2 goes.

Again I got wonderful neighbors & food for days

~ Homemade chicken pot pie
~ Chopped salad with tomatoes, peppers, celery, carrots, tiny bit of freshly grated Parmesan, balsamic dressing
~ Lemon water

Just before I made this meal I noticed I was nearly out of bread. Made a loaf of oatmeal batter bread which I baked in a bowl. The kitchen smells so good. Maybe I’ll have a slice of it later with a cup of old fashioned cocoa.

Baked Cod fillets from the freezer, ready to bake portions with a butter herb sauce

Asparagus spears

Blend of brown rice and white quinoa with black beans, corn, red bell pepper and southwest sauce from a microwavable bag


Not much cooking from scratch here tonight, but I think it will be delicious.

The only thing from my dinner that Ducky can sample is the asparagus as the other items have garlic in them. I'll get some carrots and broccoli stalks out and see if there is some meat leftovers for him. I'm sure he will accept the compromise.

TJ will be off to work in less than two hours so this is a boys only dinner.

Edit to add: Ducky seems to like asparagus. He did his twirl for a spear. Will dance for food.
