What's for Dinner, Mon., Feb. 16, 2026

I made up my own soup recipe for tonight. Using my chicken stock, I made vegetable soup. To go with it, I toasted some artisan rolls.

Added to the stock were carrots, chickpeas, sliced Napa cabbage, and diced yellow squash. I also added a few Beyond sausage crumbles.

Over the top I'll put parmesan and fennel seed. I tasted it and it's good!

If this isn't enough, I might make a stuffed pepper later.

Dessert: Apple blossom with Greek yogurt. Decaf coffee.

I tried something new: sauteed turkey burger with bok choy & napa cabbage & garlic & onion. Added low salt soy sauce.

A bit bland, but filling.
