... my family does these for Easter. Each year a different 'kid' grinds the horse-radish to go with it. My step-dad came from an Greek Catholic Church family. The eggs were for the sign of life, beet red for the blood of Christ, horse-radish for the bitter suffering life requires.

Been thinking of those this last week. I was considering deviled eggs, but you've got me thing pickled eggs.

One of our favorite holiday treats for over 50 years.

My mother-in-law's recipe was basic. Eggs, beets and vinegar. I started adding a dash of salt and a dash or sugar, and a either a few whole cloves or a dash or allspice.

I have some extra eggs. Maybe I'll make some for Thanksgiving

I also like to soak hard boiled eggs in soy sauce. Sublime
