What's for Dinner, Mon., Nov. 10, 2025

Battered fish filets with tartar sauce.

Salt & vinegar potato chips.

Coleslaw with carrot from the garden; homemade slaw dressing.

Kombucha: cherry.

Dessert: TJ's dark chocolate peanut butter cups.

1. Tired cook day dinner

Yay! I have lunch leftovers:

Amy”s refried beans in a can (low salt and made soupier with low salt veg broth) as a topper for:
Organic corn tortillas with baby Swiss organic cheese sautéed in olive oil.

No salt organic corn chips with organic tomato salsa dip

Rest and relax gaia tea

3. Italian Tofu Scramble

Steam-fried in evoo and veggie broth: chopped onion, red bell pepper, sliced carrots, sliced broccoli, sliced mushrooms and minced garlic. When done I added a couple chopped vegan Italian sausages that I air-fried, a handful of cherry tomatoes and a half block of drained and mashed firm tofu. I seasoned with nutritional yeast, dried oregano and basil, red pepper flakes and chopped parsley. Topped with TJ’s vegan parmesan after plating. A slice of apple-walnut cake for dessert. Cheers!🥂

5. Cheeseburger, the last of the mac and cheese

I was going to heat up the chili, but saw the last bit of ground beef in the fridge. I made a burger with grilled onions, garlic aioli and chili sauce, extra sharp cheddar. Mac and cheese on the side. I haven't had burgers for awhile, got 2 from this pack of ground meat, plus made a quart or so of chili.
