Spiced pumpkin soup.
Has turmeric, onion, cumin, cinnamon, ginger, and black mustard seed.
Homemade garlic croutons.
Maybe, but not sure yet, I might put veggie "sausage crumbles" in it.
Boston brown bread.
Tossed green salad with Lemon Parsley dressing.
Salad has home-grown celery, cucumbers, white daikon radish.
Kombucha: Pineapple.
Dessert: Baklava!! Aldi had it!
Yay, Aldi. The price I paid for it was a dollar less than what I used to pay for it when I bought it regularly years ago. As in 10 years ago.
I'll put a swirl of agave or lemon honey over it.

(38,288 posts)Veggie stock with lots of ginger, dried shiitake mushrooms, baby Bella mushrooms, lily buds, water chestnuts (ran out of wood ears), bamboo shoots, extra firm tofu, shredded napa cabbage, shredded carrots, soy sauce (light & dark), lots of white pepper and black vinegar.
My sinuses and tastebuds are very happy, lol.

(19,070 posts)I ate too much this afternoon (steak sandwich, Klondike bar and fruit).
So tonight it is veggies consisting of halved grape tomatoes, carrots, radishes and celery which marinated in a vinaigrette all afternoon served over low fat cottage cheese.
A big spoon of the cheese was placed on a plate for Ducky. Whoosh, it was gone. The plate looks clean enough to put away.

(1,663 posts)One of our favorite dishes when the weather starts turning cold. Peeled sweet potatoes cut into nuggets, cauliflower florets, chopped green pepper and celery, sliced carrots, chopped onions, minced garlic and a can of drained and rinsed chickpeas. Mix everything in a lg mixing bowl with a bit of evoo, dried oregano, a pinch of cayenne pepper and fresh chopped parsley. Pour into a 9x13 inch baking dish and bake uncovered for 70 minutes at 400 degrees. About 10 minutes before its done I toss on some sliced mushrooms. When done squeeze on some fresh lemon juice. (1,472 posts)My sons car broke down last night and he worked all day on it (fuel pump that was impossible to get to), so we missed the weekly grocery trip and are out of a lot of staples. I wasnt happy with how my tomato-sauceless soup turned out, so I pureed it, dumped in a bag of diced Quorn, instant mashed potatoes for thickener, and mixed veg. Even without PB for sandwiches to dunk (yep, were out of peanut butter, too!), it was pretty awesomea lot like pot pie filling but without the crust.
As of now, the car is fixed and tummies are full. Expect well finish it off tomorrow night with proper extras. I expect warm soup will be just the thing when the cold front hits ussupposed to be in the low 40s Tuesday morning, which is a big deal for those FL transplants (almost 40 years) whove long forgotten our Midwestern roots.
