Buff stuffed pumpkin (Inspired by Debs cranberry sauce thread)

Basically, little pie pumpkins stuffed with buffalo, rice, dried fruit and mango chutney
The amounts can vary quite a bit... more rice for a side dish, more meat for a main... more or less fruit. And the chutney I add to taste. They are absolutely adorable when they come out of the oven.

Buff Stuffed Sausage Pumpkin
(From Buffalo Groves, Inc.)

Start with one lb package of buffalo sausage (I use ground buffalo)

Cook the meat, perhaps with some dice onion
add about a cup of cooked rice (I use a wild rice mix 'cause it's pretty)
add 2 cups of diced, dried fruit (I use apricots and cranberries)
add 1 1/2 cup apricot sauce (I use a spicy mango chutney)
mix everything up

You need two small pumpkins (bigger than grapefruit/smaller than volleyball) which are cleaned out, then buttered on the inside

Stuff the mixture in the pumpkins, put their lids on, then bake at 350 for an hour.

Folks, chutneys made by SWAD and others are treasure troves of astonishing flavors!

Mint is especially "hot"!

Mango is sweet and "warm", as is my favorite: Tamarind Date!
