Cooking On Pennies XIV: From "Bravo! 365 Yummy Budget Recipes" 🌞

Waynesboroughs

Ingredients

5 large potatoes, peeled and diced
1 pound pork sausage
6 eggs
10 (8 inch) flour tortillas

Direction

In large saucepan, boil the potatoes until they soften yet not
mushy. Drain; put back to pan.

Brown sausage in large skillet until no pink left. Drain. Put
aside.

Spray vegetable cooking spray over a small skillet. Scramble
eggs over medium heat.

Mix scrambled eggs, sausage and potatoes thoroughly. Put into
flour tortillas.

Braised Tofu

Ingredients


1 (14 ounce) package firm tofu
cooking spray
3 teaspoons sesame oil, divided
1 (8 ounce) can water chestnuts, drained
3 ounces fresh shiitake mushrooms, stems removed
1 1/2 cups snow peas, trimmed
1/2 teaspoon oyster flavored sauce
1 cup water

Direction

Cut tofu block lengthwise into 3 long slabs. Use paper towels to
wrap each slab, and press to remove any excess water.

In a skillet coated with cooking spray, heat 2 teaspoons sesame
oil; add tofu slabs to the skillet when oil is hot. Fry each side for
about 5 minutes until nicely browned.

Take browned tofu out of the skillet, and slice into smaller
cubes. Add the rest teaspoon of sesame oil to the skillet and
saut é snow peas, mushrooms, and water chestnuts. Combine
oyster sauce and water, then pour into the skillet along with the
tofu. Cook, covered, for about 10 minutes over low heat.

Breakfast Sandwich Heaven

Ingredients

1/4 cup milk
1 egg, beaten
1 slice cooked bacon, crumbled
1 pinch dried chives
1 breakfast sausage patty
1 glazed donut, halved
1 slice American cheese

Direction

In a 2-cup glass measuring cup, mix together chives, crumbled
bacon, egg and milk.

Put into microwave oven and cook for 90 seconds to 2 minutes
until the f egg mixture is solid.

Place a small skillet over medium heat; add sausage patty and
cook for 2 to 3 minutes on each side until the center is hot.

Insert an instant-read thermometer into the center and it should
read 160° F (70° C).

Add cheese, sausage and the cooked egg between the donut
halves to make sandwich.

Cheesy Chicken And Potato Casserole With Bacon

Ingredients

Vegetable cooking spray
1 (10.75 ounce) can Campbell's ® Condensed Cream of
Chicken Soup (Regular or 98% Fat Free)
1 cup sour cream
2 cups shredded Cheddar cheese or Colby Jack cheese
1/2 cup milk
1/2 teaspoon garlic powder
1/4 teaspoon ground black pepper
1 (28 ounce) package frozen diced potatoes (hash browns) with
onions and peppers, thawed
Salt
3 cups shredded cooked chicken
4 slices bacon, cooked and crumbled
2 tablespoons chopped fresh chives or thinly sliced green onion

Direction

Let the oven heat to 375 ° F. Then with a cooking spray, cover a
baking pan with 13x9x2-inch dimensions.

In a medium bowl, combine together 1 cup cheese, soup, garlic
powder, sour cream, black pepper, and milk.

Place the potatoes in the baking dish and season with the black
pepper and salt. Put the chicken, followed by soup mixture on
top. Cover the baking dish.

Bake for up to 40 minutes or once the potatoes turn tender and
the mixture is bubbling and heated through. Uncover the pan
and top with the remainder of the cheese.

Bake, without the cover, until the cheese is fully melted. Before
serving, top it with chives and bacon.

Cheesy Corned Beef Hash Casserole

Ingredients


1 (12 ounce) package egg noodles
1 (10.75 ounce) can condensed cream of mushroom soup
1/3 cup milk
1 (15 ounce) can corned beef hash
1 small onion, diced
salt and pepper to taste
1/4 pound processed cheese, cubed

Direction

Bring the large pot of lightly salted water to a boil. Put in pasta
and cook until al dente (about 8-10 mins), then drain.

Start preheating oven to 375 ° F (190 ° C). Lightly oil a
casserole dish (about 8x8 inch).

Mix together noodles, pepper, salt, onion, corned beef hash,
milk, and soup in a large bowl. Spoon into the oiled casserole
and drizzle cubed cheese on top.

Bake in prepared oven until cheese is bubbly (about 30 mins).
