What's for Dinner, Fri., Nov. 7, 2025

I recently came into a nice cookbook collection. I love cookbooks where a church or some other organization does a cookbook as a fundraiser. I recall my mother participating in one, which I still have. I like the ones with a spiral binding that stay open while you're cooking.

This one is from a church on Block Island, an island from which I have fond memories from my time living in Connecticut. I used to visit Block Island on weekends, and we would walk and bicycle all over the place.

The recipe I chose for tonight is "Clam Fritters." It's pretty simple--flour, eggs, milk--then frying to a golden brown. I'll take the liberty of adding fresh corn from the cob.

These cookbooks almost always say who the contributor was, and this recipe was from Miss Ethel Gertrude Mott.

Cucumbers and dill in sour cream/mascarpone as an accompanying dish.

Kombucha: Peach mango.

Dessert: slice of white cake with cherries.



On the back is a map of Block Island, noting that it was discovered in 1613 by Adrian Block, and settled by 16 men in 1661.

I only eat them when we travel to New England coastal areas, but fresh fried clams with the bellies still attached is a “last meal of my life” delicacy. Mmmmmm. So glad we can’t get them here in WNY; I try to avoid deep fried foods except for the occasional fish fry.

For awhile, it seemed that I left with the box of recipes, booklets, pamphlets and books lovingly saved by the homemaker. I have a lot

One of my favorite finds was a spiral notebook, the old-fashioned kind with a brown cover. It came from the wife of one of the local funeral directors. It is full of copied recipes and ideas for eulogies. Some of the recipes are noted to be local family recipes.

Some of the recipes were nicely detailed

I have a lot of my Gram's and my Mom's handwritten recipes. I also have some recipe books I saved from my childhood kitchen. I love coming across Mom or Gram's handwriting beside a recipe, usually a one word comment, "Good" I make a few recipes they used. Feel like I'm spending some quality time with them

A few years ago, I made a document with all of my favorite recipes (or things the family asked for) I printed it out for my daughters, and sent a copy of the recipes to my niece. It's saved on my laptop. Our eating habits have changed quite a bit over the last 10 years and although it's fun to have the memories, I don't think the recipes are much used now.

One of these days, I will take the time to take pictures of the cookbooks and share.

I got a bottle of chili infused olive oil from Aldi and pan seared the salmon with some salmon spice.

8. Salmon Loaf Wraps

Enough salmon loaf left from yesterday to make 2 nice wraps on lavash flat bread. I slather the bread with vegan mayonnaise and Dijon mustard. Then I add slices of salmon loaf, sliced tomatoes, sliced red onion and plenty of crisp romaine leaves before I roll it up. Might have a baked apple with vanilla vegan ice cream for dessert. Cheers!🥂

10. Roasted Salmon with Garlic Yogurt Sauce

A salmon fillet is rubbed with warming Baharat spices, then seared and roasted until buttery. It’s served over mujaddara—a Middle Eastern blend of lentils, brown rice, and caramelized onions—plus roasted tomatoes and garlicky broccoli. A garlic yogurt sauce adds a c finish. (and added 1/2 lemon!)
