What's for Dinner, Sat., Nov. 1, 2025

Posting early due to working late.

Mollie Katzen recipe, Eggplant Almond Enchiladas. I'm using flour tortillas, though.

Apple cider to drink.

Dessert: Might bake the other half of white cake and put toasted walnuts on top.

Lettuce, grape tomatoes, cucumber, carrots, broccoli, radish, boiled egg, and turkey with vinaigrette.

If I am still hungry there are leftovers like petite gold potatoes with green beans, baked beans, mac and cheese etc.

5. Church fundraiser meal

My daughter treated me to a baked steak meal, with mashed potatoes, gravy, green beans, a roll and a sugar cookie with a big frosting flower on it I didn't eat all of it.

6. Stuffed Zucchini

I parboiled a very large zucchini and scooped out much of the pulp. I made a stuffing of steam-fried chopped onion, red bell pepper, cabbage, sliced mushrooms, minced garlic, brown rice and vegan sausage crumbles. I seasoned the stuffing with oregano, basil, and parsley. When done we spooned marinara sauce over the stuffed squash and then sprinkled vegan parm on top. Cheers! 🥂

Chef Santiago's take on Mexican-style paella honors the roots of the seafood-filled rice that was created in the ports of Mexico. His version features plump shrimp, Mexican chorizo, and chicken, along with a special seasoning of dried chilies and spices. It is very similar to Spanish paella, the smoky chilies give it a unique touch.

Gonna take a while to finish dinner; ice cream later.

When my son discovered the IP percolating and asked what I’m up to, he immediately insisted we’ll need black beans and maybe rice to go with.

Not sure why he loves to complicate life but maybe this’ll be one night he doesn’t play hobbit and insist on a second dinner. *smirk*
