Grocery store frozen pizza. Remember when justaprogressive told us the only good one was Screamin' Sicilian? Yesterday I told everyone they are on sale at ShopRite for only $4.99 with a digital coupon. Because today has been crazy busy, I can't cook anything, but I do have a salad ready.
The salad will have cucumber, scallion, and baby carrots. I made carrot cake croutons the other night, so those and sesame dressing. On top, toasted pepitas.
Blueberry ginger kombucha.
Honeydew melon for dessert.

Garlic Butter Shrimp Scampi

Ingredients
2 tablespoons olive oil
▢4 tablespoons butter
▢4-5 cloves garlic large, minced, or 1 1/2 tablespoons minced garlic
▢1 1/4 pounds shrimp large prawns, shelled with tails on or off--I have a package of 12 ounce salad shrimp
▢1 pinch salt to taste
▢1 pinch cracked pepper to taste
▢1/4 cup dry white wine or broth---I'm using chicken stock
▢1/2 teaspoon red pepper flakes crushed, or to taste - optional
▢2 tablespoons lemon juice
▢1/4 cup fresh parsley chopped
Instructions
1.Heat olive oil and 2 tablespoons of butter in a large pan or skillet. Add garlic and sauté until fragrant (about 30 seconds - 1 minute). Then add the shrimp, season with salt and pepper to taste and sauté for 1-2 minutes on one side (until just beginning to turn pink), then flip
2.Pour in wine (or broth), add red pepper flakes (if using). Bring to a simmer for 1-2 minutes or until wine reduces by about half and the shrimp is cooked through (don't over cook your shrimp).
3.Stir in the remaining butter, lemon juice and parsley and take off heat immediately.
Serve over rice, pasta, garlic bread or steamed vegetables (cauliflower, broccoli, zucchini noodles).

(24,241 posts)Its been rainy and muggy all day in the Catskills. Its the first real rain in a month. But we didnt want to go out so we did some freezer diving and found a beautiful swordfish steak.
Itll be seasoned with salt & pepper then sautéed in olive oil, butter, white wine and lemon. Served with Basmati rice and steamed green beans. Chardonnay and ice water.
Chocolate chip cookies for dessert.
Freezes well so Im getting another just for times like you described.
I had some this last week and it was so delicious and easy to prepare, too!

(1,577 posts)Wanted to use most of the produce I have on hand so I made a large pot of soup. I sweated in veggie broth and evoo: chopped onion, celery, carrots, green bell pepper, cabbage, leeks, sliced mushrooms and minced garlic. While that was cooking I cooked a lb. of green lentils in veggie broth with bay leaves. When the lentils were soft I added a couple cups of fresh chopped tomatoes and a can of tomato paste. The cooked veggies were added to the pot of lentils, I turned off the heat and added a bunch of fresh thyme from my garden to perfume the soup. I took the herbs out in about 5 minutes and added fresh chopped parsley and S&P to finish. Will have some nice crusty whole grain bread along with the soup when we eat in an hour. Cheers!🥂
