What's for Dinner, Mon., Sept. 15, 2025

Last edited Mon Sep 15, 2025, 07:00 PM - Edit history (1)

Stuffed peppers. The stuffing will have ground chicken, celery, onion, and herbs. Topped with cheese. I'm doing them in the air fryer.

To go with it, a small dinner salad and some sweet potato fries.

Kombucha: cherry ginger.

Dessert: honeydew melon.

and baked beans

I had a stomach upset last week, recovered, but didn't make anything worth writing home about. Spent the weekend with my grands, just got back in the kitchen today.

I used P.F. Chang's sweet and sour sauce and thought it was bland. I might add some stuff to the leftovers to kick it up a notch. I got some pot stickers from Aldi, and cooked them with the chicken, added the sauce after it was all cooked.

I’m solo tonight. Spaghetti with marinara sauce and a hot Italian sausage. Green salad. Chianti.

We’re down at my camp enjoying our new (used) camper for a few days taking advantage of the great end of summer weather. I steamed cut green beans, mushrooms and Field Roast Apple-Sage sausages together in the same pot. Also had microwaved sweet potatoes and sliced tomatoes. Cheers!🥂
