Banana Pancakes

Dry ingredients:

1 cup flour
1.5 tsp baking powder
.5 tsp baking soda
1 tbsp sugar
.5 tsp salt
.5 tsp cinnamon

Whisk ingredients together (or sift). Set aside.

Wet ingredients:

1 overripe banana, mashed
1 extra large egg (room temperature)
1 cup milk (again, room temperature)
1 tsp vanilla
2 tbsp oil (canola or corn or vegetable are fine)

Whisk together.

Make a well in the dry ingredients. Mix wet ingredients into dry ingredients by hand, just until flour is incorporated. Do not overmix. Batter will be lumpy; it's okay. Allow to sit for 15 minutes so batter will develop, and pancakes will rise.

Fry on a (buttered or oiled) griddle or skillet at about 275 degrees; cooking these at the same temperature as regular pancakes will burn them. It will take a little longer for these to cook than regular pancakes, so be patient. As usual, cook until bubbles appear on first side; cook on second side for a minute or so, tops. Serve with genuine maple syrup and butter for best results.

These are the best pancakes I've ever made. If you like, you can chop up some nuts and mix them into the batter for banana nut pancakes. Enjoy.
