Sumptuous Senegalese Salads!! 🌞

Senegalese Bean Salad



Bean Salad is a vibrant and flavourful dish that showcases the culinary

Ingredients:

2 cans (15 oz each) of black-eyed peas or kidney beans, drained and rinsed
1 red onion, finely chopped
1 bell pepper (any colour), diced
2 tomatoes, diced
1 cucumber, diced
1/4 cup chopped fresh parsley or cilantro
Juice of 1-2 lemons
3 tablespoons olive oil
1 teaspoon ground cumin
1/2 teaspoon paprika
Salt and pepper to taste

Instructions:

1. In a large mixing bowl, combine the drained and rinsed black-eyed peas or
kidney beans, chopped red onion, diced bell pepper, tomatoes, cucumber, and
chopped parsley or cilantro.

2. In a small bowl, whisk together the lemon juice, olive oil, ground cumin,
paprika, salt, and pepper to create the dressing.

3. Pour the dressing over the bean and vegetable mixture. Toss gently to coat
everything evenly.

4. Let the Bean Salad marinate in the refrigerator for at least 30 minutes to allow
the flavours to meld.

5. Before serving, give the salad a final toss and adjust seasoning if needed.

6. Serve the bean salad as a refreshing side dish or on its own.
