Steam-fried in evoo and veggie broth: chopped onion, yellow bell pepper, celery, sliced carrots, cabbage, mushrooms, zucchini and minced garlic. When almost done I added more broth and a few Tbsps of tomato paste. Then I mixed in some air-fried crispy tofu cubes, black beans and spices of chili powder, cumin, chipotle powder, oregano, garlic powder and cayenne pepper. Topped with chopped cilantro from my garden and avocado slices. Cheers! 🍻

sounds a bit like yours, but with more an Italian zest than Mexican, and including pasta. I was definitely in the mood for soup. I've been sick for over a week, feeling so puny it's hard to even get out of bed. Breathing is hard, but my O2 level reads okay on this little thingee I bought during the height of covid. So, I dunno... maybe it's just trump overload that's killing me, body and soul... and that's where a good bowl of soup shows its best healing powers. Your soup sounds delicious! And makes me even more want to drag this old body in front of the stove and cook up some magic of my own!

I understand fully that the times we are living through can make us ill. It’s horrible but we have to persevere. At least we can still eat nutritional foods and enjoy the art of cooking. Soups are great for exercising our creativity in the kitchen.

asked me what makes it so special (lol). I told him lots of love with every stir... good, real, wholesome ingredients... and knowing when to stir clockwise and when to stir widdershins (counterclockwise). IOW, cooking is a bit of ritual magick to bring healing and nutrition to those I love.
