Related: About this forumHow do you cook fresh corn on the cob? Steaming it is recommended for best flavor.
(snip)
Sirna recommends a different approach: Instead of boiling a big pot of water, just put about a half inch of water in the bottom. Shuck the ears, throw them in for five minutes with the lid on, and steam them.
When you steam corn, youll know what corn really tastes like, he said.
Hes not alone in that thinking. Chef Jamie Simpson at The Chefs Garden in Huron, also steers clear of the boiling pot. He prefers to keep the husk on and steam the cobs.
I recommend cooking the corn in the husk, Simpson said. You can bake it, poach it, grill it, or even microwave it. The end result is a steamed kernel with no leaching of sugars, water, or flavor.
Both Simpson and Sirna agree that steaming whether with the husk on or off the natural sweetness and tender crunch that make just-picked corn special.

(1,285 posts)An inch of water with a rack, set for 1 minute, and by the time it comes to pressure and counts down to 0, it's perfect.
I strip the husks off because I have no desire to scald my fingers trying to get the silks out.

(7,220 posts)First, pull off the outermost husks, leaving inner husks on tight. Pull off the tassels and break any long stem. Then nuke.
After it's cooled, peel back the husks to create a handle, slather in mayo and parmesan. Oh my word, it's so good.

(2,530 posts)I like to remove husks and silk before cooking so I dont have to deal with those when the ears are hot. Wrap clean rinsed ears in wax paper and microwave on high power, 1 to 1 1/2 minutes per ear
then enjoy!
I ALWAYS wash hands after removing husks, and thoroughly rinse the cleaned ears, because I dont know what the farmer has sprayed on them. Chances are (especially if the ears have little or no earworm or fungal damage) that one or more pesticides and/or fungicides have been sprayed on the corn.
