What's for Dinner, Mon., Aug. 11, 2025


Posting early due to working late.



Eggplant Parmesan with Chicken.

A friend gave me a beautiful eggplant, so I want to use it while it's fresh. I don't even think I'll bread the eggplant; instead I'll use the air fryer. This will make it an easy recipe and that's important when it's 88 degrees out.

Side dish will be Asian cucumber salad, with rice vinegar, soy sauce, agave, and sesame oil. I'll thinly slice some red and gold peppers to go in, too, along with scallion greens.

Chopped herbs and toasted sesame seeds on top.

Cranberry kombucha.

Dessert: strawberry frozen fruit bar.

3. Air-fried Shrimp

over rice with mixed veggies. Tossed wild caught shrimp in a bit of evoo and seasoned with garlic powder and paprika. Air fried the shrimp for 4 minutes. Perfect. Served on top of a stir-fry of onions, red bell pepper, broccoli florets, sliced mushrooms, and minced shallots and garlic which I tossed with cooked brown rice. Seasoned with fresh chopped basil, oregano, parsley and Miyoko’s butter. Cheers!🥂
