Itz Sunday, Feed Your Cookie Monster! Lemon Sesame/Banana Oatmeal 🌞

Lemon Sesame Cookies



Unhulled sesame seeds are high in calcium and essential minerals. In this recipe
they add a wonderful nutty taste and a crunchy texture.

1/2 cup unsalted butter, room temperature
1 cup real maple syrup or honey
Zest of 2 lemons, organic preferred
1/2 cup fresh lemon juice
1 egg, organic preferred
1 tablespoon real vanilla extract
1/2 teaspoon sea salt
1/2 cup unhulled sesame seeds
2 cups whole wheat pastry flour
1/2 cup oatmeal
2 teaspoons baking powder

PREHEAT THE OVEN TO 350 DEGREES.
PREPARE 2 OR 3 COOKIE SHEETS WITH PARCHMENT PAPER, OR GREASE WITH BUTTER.

In a medium bowl or food processor, beat the butter
until smooth and soft. Add the maple syrup, lemon
zest and juice, egg, vanilla, and salt. Beat well to combine.

In a heavy bottomed skillet, lightly toast the sesame
seeds, stirring constantly, about 5 minutes. Some will
pop out of the pan. Remove from the skillet as soon as
they are toasted to prevent scorching.

In a large bowl, combine the flour, sesame seeds, oatmeal, and baking powder.
Add the butter mixture to the flour and stir until moistened.

Drop teaspoonsful of cookie dough onto the prepared
sheets, allowing room for the cookies to spread. Bake
until the edges turn golden brown, about 10 to 12 minutes.

Using a metal spatula, remove the cookies to a cooling rack.
Store in a covered jar.

YIELD: 2 DOZEN COOKIES

HEALTHFUL HINT: Seeds and nuts are full of essential fats that are
good for us, and these fats can also go rancid quickly. To avoid rancidity
buy only whole, unroasted, raw seeds and nuts, and keep them refrigerated.

BANANA OATMEAL COOKIES




3/4 cup shortening
1 cup quick-cooking rolled oats
1 cup sugar
1 1/2 cups flour
1 egg
1/2 tsp.soda
1 cup mashed bananas
1/4 tsp.nutmeg
1 tsp. salt
3/4 tsp.cinnamon
1/2 tsp.baking powder

Cream shortening and sugar.Add egg and beat thoroughly.
Add banana and rolled oats; mix well. Sift other dry ingredients
and stir into mixture. Drop by teaspoonfuls on greased baking
sheet about 1 1/2 inches apart. Bake at 400° for 13 to 15 minutes.
