What's for Dinner, Wed., July 30, 2025

I was wondering what I could do with the various vegetables I have , such as zucchini, corn, eggplant, scallions, and herbs. I found this idea for "Chopped Salad Tacos" in a magazine. Just mix the veggies up and serve them with salsa. Also add pinto beans, but I might use cannellinis. Put them in a soft taco shell, add some guacamole and the salsa, and voila, dinner.

Kombucha: pineapple ginger.

Dessert: ice cream cone, miniature style with chocolate and walnuts.

…to be served over mashed potatoes, with a cup of chilled soup (buttermilk, yogurt, cukes, spinach, cilantro, garlic, avocado.)

100 degree days here in NY and I’d rather not cook, but I’m battling back from anemia that put me in the hospital a few weeks ago. Heavy on the iron!

Making myself a big chef salad for dinner.

I can hardly wait. I have a new Ego weed wacker to try out. But at the same time, we're supposed to get a lot of rain! 1.35 and it starts at midnight, getting more intense rainfall by 6 p.m. So that might mess up my weedwacking. Right now it is 86 at 7:45 p.m.

was a few drops. You could hear thunder north of here, so apparently there was rain nearby. This prolonged heatwave has me way behind on my weed wacking. Maybe tomorrow I'll put on my back brace, shoulder brace, and do some weed wacking too.

While I steamed some TJ’s frozen gyoza dumplings I steam-fried in avocado oil and veggie broth: chopped onion, sliced celery, carrots and mushrooms , minced garlic and ginger. When done I added black beans and a bottled garlic-sesame sauce. The veggies were great along with the dumplings. Cheers! 🥂

Near the base of Mt. Monadnock in NH, is a golf club/tap room, where on your birthday you can get a free entree at their pub.

So, Al took me there for my free meal and I got a cheeseburger--which the kitchen executed perfectly.

We spent the rest of the day doing a "bar crawl" (actually only 2 different watering holes) and then finished the day w/ homemade peach pie
