What's for Dinner, Tues., July 29, 2025

Bought some baby spinach yesterday and will have some of it as a Spinach Caprese Salad. Mozzarella, basil. It has balsamic dressing. The spinach is being chilled in ice water to make it crunchy.

Fried flounder, breaded in panko. Lemon wedges.

Kombucha: cherry.

Dessert: Slice of chocolate croissant and cup of tea.

Spaghetti with meatsauce, garlic toast made in the skillet. A marinated salad with English cucumber, Roma tomatoes, sweet peppers and artichokes in EVOO and apple cider vinegar and spices. A San Pellegrino over ice with lemon.

Nollie will have puppy kibble and spaghetti noodles on the side.

We are anchored in the Hudson River just south of NY’s Bear Mountain Bridge next to Iona Island. It’s a magically beautiful evening!

The First mate is sauteeing (is that a word?) sweet and hot sausages along with various colorful and chopped peppers, onions and garlic. Those will be served on Portuguese rolls that have been toasted then seasoned with olive oil, balsamic vinegar, salt and pepper and red pepper flakes.Chianti and lemon ice water to quench our thirsts on a 90-degree day!

For dessert, we’ll have gourmet cookies with milk.

It feels fabulous to be on the water again!

3. It's Brussels sprouts night

I have a pound I need to use up, so halving them, pan-frying until brown, tossing in walnuts and dried cranberries, and a big splash of raspberry-walnut vinaigrette to cook down as a sauce.

Son is out gallivanting, so I don’t even have to share.

5. Air-fried Salmon

Sockeye salmon fillets basted with Dijon mustard and seasoned with garlic powder, black pepper and paprika. I then sprayed the fillets with olive oil which creates a nice coating when air fried at 400 degrees for 9 minutes. Fresh lemon liberally squeezed on the fillets after plating. Steamed cabbage with sliced mushrooms and microwaved purple sweet potatoes filled the bill. Cheers!

6. Leftover eggplant parmesan

I'm getting a lot mileage out of the eggplant parmesan I made Sunday. I cooked some angel hair pasta yesterday and had some of the eggplant on that. Today, I sauteed some chicken with chopped garlic scapes, reheated some casserole and pasta, and had a layered bowl.

I had eggplant, zucchini, and peppers left, so I chopped about 2 cups of vegs, sauteed in olive oil, added chopped black olives, capers, and an array of spices, balsamic vinegar, liquid smoke lemon juice to make olive salad. You know I just throw things together, first time I tried liquid smoke and it was a good idea I tried it on some bread. My snack for the rest of the week.

side salad of red leaf lettuce, Vidalia onion, shredded carrots, and tomato... dressed w/ blue cheese dressing.

Brownie for dessert
