What's for Dinner, Thurs., June 2, 2025

Beet salad with ruffly lettuce, honey goat cheese, and toasted walnuts.

Cold shrimp cocktail with red cocktail sauce.

So hot here, I don't think I will want anything else. 88 degrees.

Dessert, if I have it, would be a little chocolate mousse Haagen Daz.

I will be curious to see what Emile has for dinner tonight. Maybe something from Aldi?

Doctoring up in this case means canned collards with added bacon and Texas Pete hot sauce

I most often poop out before I figure out dinner on work nights but at son’s insistence, I had a Gardein burger (despite the goofy “Bef burger” name—I don’t WANT meat and don’t need to pretend it is…) on seeded bread with BBQ sauce and sweet pickle relish. I usually make my own seitan, but these were on sale (only $2.19 for a 4-pack!) so kind of a lazy splurge.

Good enough that I may take one for lunch at work tomorrow, just because.

This Gardein stuff is great. Take a few crumbles out of the package from the freezer and pretend you added "sausage," and there you go. It tastes really good, I think. And so fast and easy. I'm a fan.

... but it's so much cheaper to make your own. I'd just finished the last of my big batch of black bean beet burgers and saw the sale on these and said, "$2.19?! Hell yeah!"

Only thing easier is to throw a cup of TVP in spaghetti sauce or chili. Don't need Gardein prices for burger crumbles.

Steam-fried in evoo and veggie broth: chopped onion, yellow bell pepper, sliced carrots, sliced mushrooms, cut asparagus and minced garlic. When done I added air-fried tofu cubes, cooked whole wheat spaghetti, and a dollop of Miyoko’s butter. A good helping of TJ’s vegan parmesan and chopped parsley after playing. Cheers! 🥂

a "little" turned into the whole container. It was great!

I deserved it, I rationalized, because I was out in this heat most of the day.

I actually had chocolate with espresso chips. Is that ever good.

I have no excuse, haven't been out in a day, and expecting same tomorrow, due to this: The National Weather Service has issued a Heat Advisory for Calvert County for Friday, July 25, 2025. Heat index values of 106 degrees are expected.

B&J Coffee BuzzBuzz works; hope some in freezer.
