What's for Dinner, Mon., June 23, 2025

Justaprogressive has a couple posts with some good ideas for hot weather cooking. I looked at the list and am going with lettuce wraps filled with chicken. Suits my need perfectly because I have the chicken already cooked and I also have all the ingredients, like hoisin sauce, oyster sauce, ketchup, garlic, etc. Oh and did I mention lotsa' cold crispy lettuce in the 'frig?

Some of the items I intend to add are garlic, scallions, ginger, sesame seeds, and peanuts.

The Sichwan cucumber recipe she posts looks good, too. It has hot pepper flakes, soy, rice wine vinegar. Might make that as well.

Cherry-ginger kombucha.

Dessert: shortbread cookie with chocolate square. Cold iced tea.

p.s. forgot to mention, it's 97 here!

For lunch. It made enough for 3 servings for me.

I used Tamari instead of soy sauce, tripled the tamari-oyster sauce& added drained cubed soft tofu and a package of birdseed ''Asian ' vegetable mix. Once everything was coated in the sauce, I enjoyed it.

Cold sparkling water with lemon on the side.

mine is a philly steak sandwich with provolone and lots of green pepper slices, along with barbecue potato chips! Enjoy!

I'm thinking about an egg salad sandwich. I will probably also have my second lime Lassi of the day, too. Ice water with lemon and a couple of lemon shortbread cookies and I will be good.

Didn’t want to get the kitchen hot since it’s still 86 outside. Finely sliced cabbage, chopped red bell pepper, sliced apple, grated carrot, minced red onion, chopped smoked tofu and chopped parsley tossed in a homemade creamy apple cider dressing. Served on chilled plates with a a good amount of fresh diced tomato on top. Cheers!🥂

So dead cow, roasted gold potatoes, and Ms K wants asparagus. I'll probably pick up something for dessert-- I rarely do sweets. Maybe I'll make a simple green salad, too.
