What's for Dinner, Sun., June 1, 2025

Chicken sausage wrapped in turkey bacon, served on pita with chipotle mayo dressing. Red onion slices.

Zucchini fries made in the air fryer. Used panko. Very crunchy!

Dessert: Cantalope and blueberries with mango sauce. Mango sauce is mango whirled in the blender and spooned over the top, then sliced, toasted almonds.
Hot decaf Earl Grey.

1. Yum on your dessert

I love cantaloupe, but it's too early where I live and there is nothing worse than a hard, tasteless cantaloupe. Much like my dating years: so much promise but disappointing in the end.

Here we're having an asparagus quiche with fontina, smoked gouda, and romana reggiano along with grilled chicken sausages and a salad. For dessert, strawberries and cream.

I scored some nice locally grown strawberries and asparagus at the farmer's market Saturday and am excited.

None of the grocers here had rainbow trout, so I'm using steelhead trout and hoping for the best. Couscous with carrot and saffron, and asparagus with hollandaise sauce for sides.

...one pound ground turkey, one medium can tomato sauce, one medium can Manwich sauce. A little water, a little time; pretty darn tasty.

7. Snap Pea and Veggie Pasta

Steam fried in evoo and veggie broth: chopped onion, sliced carrots and minced garlic. When soft I added sliced mushrooms and trimmed snap peas. When done I added air-fried tofu cubes, cooked red lentil rotini and a dollop of Miyoko’s butter. After plating, finish with vegan parm and fresh chopped parsley. Cheers! 🥂

We’re on our way back to the States tonight. The Landlady made prosciutto and Brie on croissants and sliced up a fresh dragon fruit for us as we wait for our flight.
