I tried a recipe I saw

I had all the ingredients on hand, except one, heavy cream for no-bake lemon truffles. I had half and half. I decided to use a little of that and some cream cheese. I used the ingredients, but didn't follow the recipe. I ended up with a nice lemon cheesecake

For the cheesecake, I made a crust with a mixture of graham crackers and vanilla duplex cookies, 3/4 sleeve of graham crackers, about 3 cookies with the frosting. I added enough melted butter to lightly hold it together. I baked it for about 10 minutes and let it cool.

I used about 6 oz. white chocolate chips, splashed in some half and half (a scant 1/4 cup, but that's too much, a TBS might be better) and about 1 1/2 TBS lemon juice. I ended up using 8 oz. of cream cheese to get a cheesecake consistency. I poured the filling into the cake and chilled it for an hour or so. It set up. I think I could have added some sugar, but the flavor is okay. (Note to self: stick to the recipe! lol)

My family loves anything lemon.

I made a 9 x 13 dish of “Lemon Lush” dessert last weekend and my guys devoured all of it except for 3 pieces.

I made chocolate lush a long time ago, when there was a crowd to share it with. My s-i-l likes lemon more than other flavors. I went to Ollie's a little while ago and saw lemon Oreos and lemon KitKats! I didn't get either. I was virtuous and got oatmeal bars

...I've had a few disasters, but mostly things work out to be pretty yummy, if not completely different. I've grown to enjoy my culinary surprises.

I have made soggy bread (!) and ruined cakes, so I learned to pay attention to the recipes.

When I'm cooking, anything goes. My Mom didn't follow recipes because she liked the things to taste different every time. She liked soup, too because every bite was different I learned from the best

...if not exactly. Baking is a science; it's really easy to have a disaster. Otherwise, I never follow recipes. To me, cooking is an art form. It's an ephemeral art form: the food is there, you eat it and the art is gone. The appreciation is in the recollection. I cook to create. Following recipes to me is like painting by number; the result might be nice but it isn't art. I'll sometimes read a recipe, take the idea from it, and then put the recipe away and just cook.

Which probably lowers my winning percentage as a cook, but I don't care. I don't mean to criticize those who follow recipes, but that's how it is for me.

I remember Home Ec class in 7th grade. The teacher would give us printed copies of recipes and 6 girls in each module had to follow the recipe and get similar results. My friend thought a better way to teach was to have a stocked pantry, and have the students pick items to make something edible lol
