Roasted beet, walnut, and goat cheese salad made with romaine.
Tortelloni en brode with prosciutto-cheese tortelloni, asparagus, toasted almonds. Chives, scallions. Lemon juice over the top. I am improving this recipe, which I tried for the first time about a week ago. The secret, I've decided, is a homemade vegetable broth.
No sugar Pepsi cherry because it's raining and I'd have to go to the greenhouse for more pomegranate kombucha. Nope.
Strawberry milkshake for dessert.
---------
on edit: I added 1/3 cup of burrata to the soup dish before pouring the tortellonis and broth over it.

Browned drumsticks with veggies and wine to start. Crimini mushrooms sauted in bacon fat and butter. Pearl onions softened in chicken broth.
Reduced sauce over whipped Yukon gold potatoes.
Four meals for us.

It is a labor of love making your own comfort food.
We had a delivery of a new bathroom vanity this evening and the guy said our kitchen smelled like a restaurant.
You would be hard pressed to find a better coq au vin.

(5,409 posts)Bought a bag of clementines last week and thats *a lot* of oranges for one person! Ive had my fill, so looked online for a chicken recipe using oranges or orange juice.
This was tasty! I made adjustments, of course!
It called for honey, brown sugar, orange juice, apple cider vinegar, chili powder, coriander, and cumin, simmered for 30 min until it cooked down into a glaze. I dont have any cumin or coriander, so left those out and added a drizzle of soy sauce and a little bit of diced onion towards the end of the simmering. Cooked the thighs in the air fryer and spooned some glaze on at the end for 3 min. Thought it would be too sweet (it definitely was when I dipped my finger in the glaze pan) but once cooked onto the chicken it was just right. Will be making again.
Jasmine rice and garlicky broccoli as the sides.

(43,516 posts)Gonna' try it. Thanks for being so detailed about the ingredients.
Re bags of clementines, I use some of mine as a combo with pineapple in kombucha. It's such a pleasant experience--the aromas of the fruit and the pineapple.

"Were making it even easier to whip up a quick, satisfying hot lunch any day of the week! A highlight of this dish is the cabbage, mango, and tomato slaw, dressed in an herby chimichurri sauce and sprinkled with crushed red pepper flakes for a spicy kick. It adds fresh tropical flavors to a hearty heap of Cuban-spiced black beans and rice, and garnishes of sweet corn and crunchy almonds."
