This evening I made a dish that my mother made when I was a kid that I haven't had for more than six decades.

It’s cubes of stale bread, celery, and onions, with lots of pepper baked in creamed corn. I don’t recall any of my relatives or anyone else for that matter making it. I doubt that it’s a recipe my mother created.

BTW, it’s delicious! 😋

and hid it in a drawer. My mom served it sometimes. I never got used to it but squash and onions were the only two foods I was allowed to boycott. So into the napkin the creamed corn went.

A corn casserole , which can be quite good sometimes with a bit of cheese added to the top

BAKED CORN PUDDING
□   2 (10 oz.) pkgs. frozen corn
□   3 eggs, well beaten
□   1 tsp. grated onion
□   1/4 c. unsifted all-purpose flour
□   2 tsp. salt
□   1/4 tsp. white pepper
□   1 tbsp. sugar
□   Dash of nutmeg
□   2 tbsp. butter
□   2 c. light cream
□   1 (4 oz.) can pimentos
Preheat oven to 325 degrees. Lightly grease a 1 1/2 quart shallow baking dish. Combine all in large bowl; mix well. Bake 1 hour or until pudding is firm or knife comes out clean. Serve hot.

I use regular chopped pepper, and milk though. It's 'licious!

Creamed corn (only from fresh corn on the cob) is so good!

Yesterday my 85 year old mom made Corn Chowder. It was delicious!! We crumble bacon and green onions on top before eating. Yum!!!
